Ingredients
- 1 protein sachet of cream of chicken
- 1 spaghetti squash
- 1 yellow onion
- 1/2 tsp. chopped garlic
- 2 cups of fresh spinach
- 1/2 cup grated low-fat cheese
- 1 tbs olive oil
- Salt & pepper to taste
Preparation
Cut the spaghetti squash in half lengthwise, remove the seeds with a spoon. Cover the squash with plastic wrap and microwave for 10 minutes (check halfway through cooking).
Place the squash in a baking dish and scrape with a fork to loosen the flesh, set aside.
In a skillet, brown the onion, garlic and spinach in olive oil, add this mixture to the squash.
Make the protein cream of chicken mixture according to the directions on the box and spread it over the squash.
Add the cheese and brown in the oven.
