Ingredients
- A cauliflower
- 1/2 cup low-fat sodium chicken broth
- 1/2 small yellow onion
- 2 tbsp. chopped garlic
- 1 tbs garlic powder
- A pinch of salt
- Black pepper to taste
- 2 tbsp. chopped oil-free sundried tomatoes
- 1 box of protein fusilli
Preparation
Steam the cauliflower until tender. Brown the onions and garlic in a skillet with non-stick coating. In a food processor, place the cauliflower, add the chicken broth, grilled onions and garlic. Puree to a creamy consistency. Reserve. Cook pasta according to directions, add sauce and garnish with basil and cherry tomatoes.
