Ingredients

6 cups low-sodium, fat-free chicken broth
2 tbsp. tomato paste
1 can of diced tomatoes without added salt
5 stalks of celery
2 zucchini, diced
1 chopped onion
1/4 cup chopped fresh basil
1 C. dried oregano
1 garlic clove, minced
3 cups of fresh spinach
1 bay leaf
1 pinch of cayenne pepper
1 sachet of Orzo or Fusilli protein pasta

 

Preparation

Bring the chicken broth to a boil, add all the ingredients (except the pasta). Simmer for about 1 hour. Remove the bay leaf and set aside. (The soup makes about 3 servings).
Cook protein pasta according to package directions. Add the cooked pasta to your serving of soup and Enjoy!
