Pumpkin and Roasted Garlic Soup Recipe

Ingredients

1 small pumpkin, cut into pieces

1 head of garlic, cut in half

1 medium onion, quartered

4 cups reduced-salt, low-fat chicken broth

1 c. tablespoon of olive oil

Prep time

On a baking sheet, spread the pumpkin pieces, onion and garlic, bake at 350 for 35 minutes or until the pumpkin is tender.

Once the vegetables are cooked, put the ingredients in a blender and add the chicken broth
