Ingredients:
- 6 cups fat-free, low-sodium chicken broth
- 2 tbsp tomato paste
- 1 can of diced tomatoes without added salt
- 5 stalks of celery
- 2 zucchini, diced
- 1 minced onion
- 1/4 cup chopped fresh basil
- 1 tbsp dried oregano
- 1 clove of garlic, minced
- 3 cups fresh spinach
- 1 bay leaf
- 1 pinch of cayenne pepper
- 1 sachet of protein paste Orzo ou Fusilli
Preparation:
Bring chicken broth to a boil, add all ingredients (except pasta) Simmer for about 1 hour. Remove bay leaf and set aside. (Soup makes about 3 servings)
Cook protein pasta according to package directions. Add cooked pasta to your serving of soup and Enjoy!
